Q: What is liquid smoke, and why is it used?
A: Liquid smoke is a very concentrated flavoring that adds a smoky taste to food. It's made by capturing and refining gases that are given off by smoldering woods; the gases are then chilled, which liquifies them. Because liquid smoke's flavor can overwhelm other ingredients, it should be used spariingly; add drops gradually to taste. It usually can be found in the sauce and condiment aisle of supermarkets.
