Q: Can spices like ground ginger be stored in the freezer to prolong their shelf life?
A: Moisture from the freezer or refrigerator can cause spices to clump and lose flavor. Most spices, including ground ginger, should be stored in an airtight container in a dark, dry place at cool room temperature. But there are some exceptions:
--Sesame seeds and other whole seeds can be frozen. They're rich in oil, and cold storage prevents them from going rancid.
--Red spices like cayenne pepper and paprika can lose their color and may attract insects if stored on a shelf. To prolong their life, store them in the freezer or refrigerator.
