Q: What are pasilla chiles?
A: Pasilla chiles (literally "little raisin") are the blackish-brown dried form of chilaca chiles. These medium heat chiles are 5 to 8 inches long and 1 to 1 1/2 inches across. Pasillas are usually used in dried or powdered form and are the basis for mole sauces. Sometimes ancho and mulato chiles, dried versions of the poblano chile, are erroneously labeled as pasillas.
When choosing pasillas, look for dry chiles that are whole and unbroken and have a deep color and fresh scent. They can be stored in an airtight container in a cool, dry place for up to 6 months. Look for them in the ethnic food section of large supermarkets or through mail-order sources.
