Q: With Easter right around the corner, I'm seeing a lot of references to spring lamb. How is it different from regular lamb?

A: In the past, lambs were born in the spring. Some were harvested at a young age, and the meat from those lambs was labeled "spring lamb." It was considered particularly succulent and was highly desired. Today, while you might still see it, the term is meaningless because lambs are bred year-round and most are slaughtered at a young age.
