Q: What are panko?
A: Panko are flaky Japanese bread crumbs made from wheat bread. They're much coarser than regular bread crumbs and produce a lighter, crispier crust. Choose from two types: tan panko (made from the entire loaf) or white panko (made from loaves with the crusts removed). Look for them in Asian markets or in the ethnic section of grocery stores. Substitute regular bread crumbs, if necessary.
