Tips for Truffles

truffle how-to 232When making truffles, here are some tips for success:

--Truffles are all about the chocolate, so use the best quality you can afford.

--Finely chop the chocolate so it melts quickly and consistently.

--Bring cream to a simmer (bubbles around the edge of the pot), and immediately pour it over the chocolate.

--Stir the chocolate just enough to moisten it, then let it sit 30 seconds or until the chocolate has started to melt. Stir again until it's smooth.

--To roll the truffles, you might want to use disposable gloves to keep your hands clean.

--To prevent the truffles from sticking to your gloves (or hands), lightly dip the palm of one gloved hand in cornstarch, then rub it with the other palm before rolling the truffles. Repeat as needed, but take care that you don't heavily coat the truffles with cornstarch.

--If the truffle mixture gets warm while you work, refrigerate it until it's cool.
