Saffron is a pungent, aromatic spice. The tiny threads are deep red in color but add a yellow tint to food when cooked. Made from the stigma of the purple crocus flower, saffron also is the most expensive spice. Because it’s used very sparingly in most recipes and can be purchased in small amounts, however, it’s very affordable. Look for saffron in the spice section of grocery or specialty stores. For the best quality, buy saffron threads instead of ground saffron, which sometimes can be mixed with other less expensive ingredients.
