What leafy vegetable has hues of green, hot pink, purple, red, orange or white? Meet chard, also called "Swiss chard," and its burgeoning color palette.
--Green chard, or common chard, is mild-flavored and has white ribs with dark green, crinkly leaves.
--Red chard has dark red stalks with ruffled large, red-veined leaves. It's a bit milder than green chard.
--Rainbow chard can be found in a kaleidoscope of colors, and sometimes it's even striped. It has smooth or crinkled leaves. The color of the stalk extends to the veins of the leaf. It ranges from mild to strong, depending on the color. Give it a try in Panko-Crusted Chicken Breasts with Rainbow Chard.
Chard's stems and leaves are edible. The milder stems are typically cooked, while the leaves are used raw or cooked.
