Just received my April/May magazine a couple of days ago. Can't decide which recipe to start with. They all sound delicious. Though I know for a fact the desserts are out until the first of May. I did get the makings for the Artichoke Leek and Talleggio Tart. So I guess that is the first one I'll make.

I wonder if it is just me as i saw 2 others post about the Best Buttermilk Griddle Cakes. When I followed the directions I had to add 1 C more Buttermilk to the mix. So this makes me wonder if the recipe is accurate. However after adding the extra cup of buttermilk they turned out Great.

The creamy herbed eggs were delicious. I made them a little differerent the next day. I shredded some sharp cheddar cheese over the top and placed alid on the pan for three or four min. Then I rolled the eggs out of the pan as you would for an omlet. I put two tablespoons fresh tomats salsa across the eggs. DELICIOUS!!!!

I tired the Vanilla-scented baked french toast. They tasted delicious! Everything turned out exactly the way it looked in the magazine. I have never prepared french toast in the oven and it was a breeze. I did prepare the night before so plan ahead. The next time I make these I will add cinnamon. Also, I cooked it longer than the directions say.

I made the Chocolate-Raspberry Tartlettes. The mousse wouldn't thicken correctly, I'm guessing this is due to using hot melted chocolate. First time I've ever had mousse not thicken. But, the tarts come out perfectly!

I made the asparagus and orange salad for Easter Sunday. I tweeked the receipe (like I always do) to add more flare. I steamed the asparagus in a pyrex in the microwave roughly 5minutes. Instead of using navel oranges, I used blood oranges. I also added a pint of blackberries. I didn't have sliced almonds, so I toasted pine nuts instead. I also used fresh romaine heart lettuce, fresh strawberries, and a vidalia onion. I received an abundance of compliments while the girls I work with raved and ate it all up. That always puts a smile on my face. I followed the dressing receipe accordingly but added a little over 1/4C of red wine vinegar. It was amazing.

I just became a new member. So far the Cooking Club of America website is pretty good. However, when taking the April/May 2011 Recipe Survey, I was disappointed that they did not have the Stir-Fried Spicy Ginger Chicken and the Honey Mustard-Crusted Salmon on the list. I actually tried the two recipes and they were excellent. As for the other listings, they were recipes that I plan to make. There are so many interesting tips & ideas, information, recipes, etc..., to view in this website that my eyes are overwhelmed. Noneoftheless, I am delighted to be a member and look forward to many more Cooking Club magazines.

Want to let you know up front that I am delighted with your magazine. Also as a side note - I AM NOT A GOOD COOK ~~~ none the less...I tried my hand at making the Warm Potato and Sugar Snap Pea Salad--it was to die for! Because of my husband having a couple strokes, there are so many things we cannot eat....we do a lot of improvising. With this dish I didn't have to change one single ingredient and as a side dish with salmon (he's allowed to have plenty of salmon ;0) - it's scrumptous.

Thank you for including heart healthy dishes/menus to your issues for those restricted to certain foods because of health reasons.
After all, the older we get, the more things change and for some of us that means we can't eat what or how we did while young.

I made the Vanilla SCented French Toast. I used vanilla bean paste and I also baked it a little longer that the receipe stated. THIS IS DELISH. My husband (a butter and syrup freak for pancakes and french toast) said you dont even need anything on this. Lets have it again. Saved the leftovers in a zip-lock bag and 30 sec in microwave and had breakfast to go. Will make again and have passed the receipe on to several.

don't bother to complain about the magazines you didn't get either, I've eto turn the place over to the BBB or Attorney General, I've gotten exactly ONE issue of the magazine since I signed up late summer of 2010, and I paid in advance too. Dumb on my part, I guess. I got lots of cookbooks and things I didn't order that they wanted me to buy, but not the magazines I paid for, go figure.

I also get endless invitations to become a life member. They can't manage to successfully mail 6 magazine issues and they want more money? I don't hardly think so...
