Use a grilling basket or wok to cook small pieces of vegetables, or thread them onto skewers. To use a grilling basket, first lightly oil it. Then heat it on the grill until hot before adding the food.

While you gain convenience with a grill basket, you're essentially placing a piece of metal between the food and the heat. As a result, the flavor doesn't develop as well as when food is placed directly on the grate.

I have grilled veggies in this manner for years and find the method very satisfactory. I use herbs to bring out flavors, also I close the grill lid to help build the smoke flavor. I have a new cast iron grill pan and hope the heat that can be generated will put the grill marks back on the veggies. After all we eat with our eyes, as well as our taste.
