Q: Why butterfly a whole chicken before cooking it? What's the best method?
A: Butterflying a whole chicken flattens it so it cooks more evenly and quickly and exposes more surface to browning.
With kitchen scissors, cut down each side of the backbone, cutting through the rib cage. Remove the backbone, turn the chicken breast-side up and flatten the breast bone with the heel of your hand.
