Removing corn kernels

To remove raw corn kernels for freezing or to use in recipes:

--Hold the narrow end of the ear and anchor the wide end in a bowl or cake pan to catch the kernels. Keep the pan from sliding around on the counter by placing it on a damp towel.

--Cut straight down with a sharp knife, turning the cob as you go.

I like to use an electric knife...it makes the job much faster, it cuts down on the splattering also.

I like to place a smaller bowel inside the larger bowel or cake pan and put the corn on the bottom of smaller one. it keeps the corn inside the bowel , wish it was my idea , but I learned this thic from "Rachel Ray " ... But I like the idea about the wet dish towel under to keep it from slipping .Thanks good tip !!

I've cut corn off the cob this way for years using my Cutco trimmer knife. also learned to use a wet towel or dish rag under pans on the counter to keep them from slipping and so my counters don't get marked up by the pans.

After trimming all the kernals off, I turn the knife over to the dull side of the blade and scrape it down the cut cob. This brings out all the juice and the rest of the kernal. It really cleans the corncob of all the extra. YUM. This is how to start making fresh creamed corn.
