
To make a lattice top crust for pies, follow these steps:
1. Using a pastry wheel, pizza cutter or sharp knife, cut a rolled-out circle of dough into 10 strips 3/4 inch wide.
2. Lay five strips evenly spcaed across the top of the pie.
3. Fold back strips 1, 3 and 5 halfway.
4. Lay down a strip perpendicular to the others, across the middle of the pie.
5. Straighten the folded strips; then fold back strips 2 and 4 halfway.
6. Lay down another strip perpendicular to strips 1 through 5, and repeat the procedure with the remaining strips.
7. Trim the lattice strips toa 1/2-inch overhang, and fold the overhang under the edge of the bottom crust. Press down gently to seal it, and flute or crimp the edge.
