Strips of prosciutto--an Italian-style, salt-cured, unsmoked ham--make a clever, tasty topping for salads when they’ve been crisped under the broiler.
To make crispy prosciutto, stack slices of prosciutto on a cutting board and cut into ½-inch strips. Fluff them with your fingers to separate them. Then place the strips on a greased, rimmed baking sheet and broil 2 to 4 minutes until barely crisp. Watch them carefully so they don’t burn.
