Q: What is the proper way to store fresh ginger, and how long will it keep?

 
A: Fresh ginger can be stored several ways. For short-term storage, wrap it, unpeeled, in plastic wrap or aluminum foil and store it in your refrigerator for two to four weeks. For longer storage, knobs of fresh ginger (peeled or unpeeled) can be submerged in dry sherry, rice wine or rice wine vinegar. The ginger will take on some of the wine or vinegar flavor, but that’s not a drawback in most dishes calling for fresh ginger.
 
Some people swear by freezing fresh ginger. Cut the root in conveniently sized pieces, wrap them well and freeze them in an airtight plastic bag. The thawed ginger will no longer have its firm texture, but it can easily be sliced or grated and used for cooking.
