Tempted to skip drying meat before you pop it into the oven for roasting? Don’t. It’s a critical step that accomplishes several things:
* It helps the meat brown.
* If you’re using a rub or paste, it makes it easier for the mixture to adhere to the meat.
* It ensures that a rub or paste won’t be diluted by excess moisture from the meat.
