 Morello cherries have a wonderfully wine-like complexity and tartness that hold up beautifully when made into preserves and jam. Used in the filling in Alpine Chocolate-Cherry Layer Cake, they bring added dimension to the classic combo of chocolate and cherries. Look for Morello preserves or jam in specialty food markets or order them by mail.
