This creamy dip gets tang from blue cheese and a touch of sweetness from caramelized onions.
1 tablespoon vegetable oil
1 large onion, thinly sliced
3/4 cup mayonnaise
3/4 cup sour cream
4 oz. crumbled blue cheese, room temperature
1/4 teaspoon coarse salt
1/4 teaspoon pepper
1. Heat oil in medium saucepan over medium-low heat until hot. Cook onion 17 to 20 minutes or until deep golden brown, stirring occasionally. Cool.
2. Whisk mayonnaise and sour cream in medium bowl. Add blue cheese. With spatula, mash until smooth. Stir in onions, salt and pepper. Cover and refrigerate at least 2 hours to blend flavors. Serve chilled or at room temperature. (Dip can be made 2 days ahead.)
