1 small sweet onion, sliced (1/4 inch)
1 small yellow squash and/or zucchini, sliced lengthwise (1/4 inch)
Olive oil
1 small loaf of Italian or French bread, sliced (1/2 inch)
Soft goat cheese
Balsamic vinegar
Chopped fresh herbs, such as thyme or marjoram.
1. Heat grill. Brush onion and squash with some of the oil. Grill, covered, over medium-high heat or coals 4 to 6 minutes or until lightly charred and tender but not mushy, turning occasionally.
2. Brush bread with oil. Grill, covered, 2 minutes or until golden brown, turning once. Spread 1 side with cheese; top with onion and squash. Drizzle with vinegar; lightly sprinkle with herbs.
