A blue cheese-spiked sour cream is a tasty alternative to horseradish sauce, a traditional accompaniment to pot roast. Serve it with Caramelized Onion Pot Roast.

1/2 cup sour cream
1 tablespoon milk
1/4 teaspoon Dijon mustard
2 tablespoons crumbled blue cheese
1 tablespoon sliced fresh chives
1/8 teaspoon salt
1/8 teaspoon pepper

Combine sour cream, milk and mustard in small bowl until smooth. Stir in blue cheese; mash slightly to blend. Stir in chives, salt and pepper.
