Peanut sauce is the requisite accompaniment to saté in most of Southeast Asia, where its sweet nutty flavor goes perfectly with smoky charred chicken, pork or beef. Here's a quick version that can be made in a food processor in a couple of minutes.
 
1 medium tomato, peeled, seeded, diced
1 jalapeno chile, minced (leave seeds in for a hotter version)
1/3 cup chopped fresh cilantro
3/4 cup chunky peanut butter
1/2 cup unsweetened coconut milk
1 tablespoon fish sauce or soy sauce
2 teaspoons lime juice
 
Place tomato, chile and cilantro in food processor; process until finely ground. Add all remaining ingredients; process until blended.
