Roll up your sleeves and don’t be afraid to get messy with this tasty hot dog topped with the best taco truck ingredients. If you can find them, substitute Mexican bolillo rolls for the tortillas.

1/3 cup mayonnaise
2 teaspoons adobo sauce*
4 hot dogs
4 (6- to 7-inch) flour tortillas
1 cup shredded lettuce
1/2 cup chopped tomato
1/2 cup shredded Mexican-blend cheese
1/4 cup coarsely chopped cilantro
Lime wedges

1. Heat grill. Combine mayonnaise and adobo sauce in small bowl. Grill hot dogs, covered, over medium heat or coals 5 to 7 minutes or until browned and heated through, turning frequently. Place tortillas on grill during last 1 to 2 minutes of grilling to heat through.

2. Spread mayonnaise mixture down center of each tortilla; top with hot dogs. Sprinkle with lettuce, tomato, cheese and cilantro. Serve with lime wedges.

TIP *Adobo sauce is a dark red, piquant Mexican sauce made from chiles, herbs and vinegar. Chipotle chiles are often canned in adobo sauce. For this recipe, purchase canned chipotle chiles and use the adobo sauce from the can.
