Bring color to your holiday table with this fresh green salad accented with bits of red (cranberries) and white (feta cheese). It’s tossed with a tangy dressing that conveniently can be made ahead of time.
3 tablespoons extra-virgin olive oil
1 tablespoon raspberry vinegar
1/8 teaspoon salt
1/8 teaspoon pepper
2 tablespoons sliced fresh chives
4 cups mixed salad greens
1/3 cup crumbled feta cheese
1/3 cup dried cranberries
1/4 cup sliced almonds, toasted*
1 Whisk oil, vinegar, salt and pepper in small bowl. Stir in chives.
2 Toss greens in large bowl with enough dressing to lightly coat. Top with cheese, cranberries and almonds.
4 (1 1/4-cup) servings
