A tasteful combination of sweet and savory--dates and honey paired with onion and thyme--results in an outstanding dish that’s not only easy to make but also relatively low in calories.
2 boneless skinless chicken breast halves
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 teaspoons olive oil
1/2 cup chopped red onion
3 teaspoons chopped fresh thyme, divided
1/3 cup lower-sodium chicken broth
6 pitted dates, coarsely chopped
1 tablespoon balsamic vinegar
2 teaspoons honey
1 Sprinkle chicken with salt and pepper. Heat oil in medium nonstick skillet over medium-high heat until hot. Cook and stir onion and 2 teaspoons of the thyme 3 minutes or until onion begins to soften.
2 Push onion mixture to outside edges of skillet; add chicken to center. Cook 4 minutes or until chicken is lightly browned, turning once and stirring onion mixture occasionally. Stir in all remaining ingredients except remaining thyme.
3 Reduce heat to low. Cook, covered, 6 to 8 minutes or until chicken is no longer pink in center. Sprinkle with remaining 1 teaspoon thyme.
