To soften garlic's sometimes strong flavor and to make it easier to mix into a recipe, mash it with salt to make a paste.
--Place a peeled clove of garlic on a cutting board.
--Sprinkle it with 1/4 to 1/2 teaspon of the salt called for in the recipe.
--Using the side of a chef's knife or a fork, mash the clove into the salt. Keep mashing until it's well-blended.
