The vanilla bean's intense taste and aroma make it a standout ingredient in baked goods and other desserts. Look for beans that are pliable, an indication of freshness. The Bourbon-Madagascar variety is the most common, with a sweet, rich flavor that's ideal for baked goods. To use the bean, cut it in half lengthwise. Then use the blade of a small knife to scrape the seeds from the pod.

If a recipe calls for a tsp of vanilla, how much of the vanilla bean do you use? For those who don't know where to get them, I got mine at Costco.
