Condiments
:: 2 Comments

2 cups chopped fresh tomatillos or canned tomatillos, drained
1/2 cup chopped onion
2 green onions, cut into 2-inch pieces
1/2 cup packed chopped cilantro
2 garlic cloves, minced
1 to 2 serrano chiles, chopped
2 tablespoons lime juice
1/2 teaspoon sugar
1/4 teaspoon salt

Place tomatillos, onion and green onions in medium saucepan (if using canned tomatillos, eliminate cooking step); add enough water to cover. Bring to a simmer over medium-high heat; simmer 3 to 4 minutes or until soft. Drain. Place in food processor or blender, along with all remaining ingredients; process until slightly chunky.

I roast the tomatillos, the peppers and the onions and blend them up for a great salsa.
