Balsamic-Glazed Pork with Peaches

Browned onions combined with sweet peaches and balsamic vinegar create a rich glaze to serve over pork chops.

1 tablespoon vegetable oil
1 cup chopped onions
4 (4- to 6-oz.) boneless pork loin chops
1/4 teaspoon salt
1/4 teaspoon dried thyme
3/4 cup chopped peeled peaches
1/4 cup sugar
2 tablespoons balsamic vinegar
1/4 teaspoon pepper

1. Heat oil in large nonstick skillet over medium-high heat until hot. Add onions; cook 5 minutes or until translucent. Move onions to edge of skillet. Add pork chops; sprinkle with salt and thyme. Cover; cook 7 to 12 minutes or until pork is no longer pink in center, turning once.

2. Meanwhile, in medium bowl, combine all remaining ingredients; blend well.

3. Remove pork from skillet; cover to keep warm. Increase heat to high; add peach mixture to onions in skillet. Cook 2 to 3 minutes, stirring and scraping bottom of skillet until mixture is thickened to a rich glaze. Spoon glaze over pork.

4 servings

PER SERVING: 320 calories, 16 g total fat (5 g saturated fat), 70 mg cholesterol, 190 mg sodium, 1.5 g fiber

This was the first dish I attempted. It was absolutely wonderful and I am so glad it turned out well. I think I am going to like this club a lot.

I made this dish tonight. I agree that this is a great/easy recipe. I used frozen peaches (thawed). My husband first said "what is this? why does it have fruit on it?" Funny he had 2 pieces and told me this was a keeper!

I'm going to try it with nectarines tonight since I don't have any peaches...we'll see if the substitution works!

This was Fantastic!! I used Vandallia (sweet) onions and in season So IL peaches. Husband & I both Loved it!! It will go into our family cookbook collection for sure.

This was so YUMMY!!! I will keep this recipe around! Easy to make and my kids liked it too. I also made a Greek Orzo Pasta from the magazine and LOVED that one too!

I tried this recipe with nectarines instead of peaches and it was very tasty. I would recommend substituting the pork for chicken...to give it a more tropical taste.

I am thrilled to see this recipe. I have family with severe food allergies and gluten intolerance that literally took my sister's life before she was 50 years of age. There is nothing in this recipe my family are allergic to...ya-hoo! Thank you!

This recipe was easy to make and tasted great! Looks like it takes a lot of prep time but it is quicker than you would think! :)
