Zucchini-Oatmeal-Chocolate Chip Bars

When you’ve had your fill of zucchini bread, make bars instead. These chewy ones are studded with chocolate chips and walnuts for a touch of decadence in a good-for-you treat.

3/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup packed light brown sugar
6 tablespoons canola oil
1 egg, beaten
1 egg yolk
1 teaspoon vanilla extract
1 cup shredded zucchini (5 oz.)(1 to 2 small)
1 1/4 cups chocolate chips, divided
3/4 cup old-fashioned oats
1/2 cup finely chopped walnuts, toasted*

1. Heat oven to 350°F. Spray 13x9-inch baking pan with cooking spray.

2. Whisk flour, cinnamon, baking soda and salt in medium bowl. Beat brown sugar and oil in large bowl at medium speed until smooth. Add egg, egg yolk and vanilla; beat until creamy. Stir in flour mixture. Stir in zucchini, 1 cup of the chocolate chips, oats and walnuts. Spread in pan.

3. Bake 20 minutes or until top is lightly browned and springs back when lightly touched. Cool in pan on wire rack.

4. Melt remaining 1/4 cup chocolate chips in small microwave-safe bowl on medium 1 to 1 1/2 minutes or in small bowl placed over saucepan of hot but not simmering water. Drizzle over bars; refrigerate bars a few minutes or let stand until chocolate is set.

TIP *To toast walnuts, place on baking sheet; bake at 350°F. for 6 to 8 minutes or until pale brown and fragrant. Cool.

This was delicious and very easy to adjust for a healthy version. I substituted 3/4 cup agave nectar for the sugar and 2 tbsp applesauce for the oil. Turned out very well with great comments! Thanks for the recipe.
