Spicy Sicilian Stuffed Pork Chops

Thick-cut pork chops beg to be stuffed with a tasty filling. This recipe delivers with a bold potpourri of ingredients, led by olives and peppers.

2 (8-oz.) pork chops (1 inch thick)
1/4 cup thinly sliced green onions
1/4 cup pitted Kalamata olives, coarsely chopped
1/4 cup garlic-and-herb spreadable cheese
2 tablespoons chopped pepperoncini peppers
1 tablespoon chopped fresh oregano
2 teaspoons sherry vinegar or red wine vinegar
1/4 teaspoon salt

1. Heat grill. With tip of small knife, make a horizontal slit in pork chops to create a pocket, being careful not to cut all the way through. Combine green onions, olives, cheese, peppers and oregano in small bowl. Spoon stuffing into pork chops; secure with toothpicks. Brush chops with vinegar; sprinkle with salt.

2. Grill pork, covered, over medium heat or coals 10 to 12 minutes or until no longer pink in center, turning once. Remove toothpicks before serving.

PER SERVING: 380 calories, 23 g total fat (10 g saturated fat), 38 g protein, 4 g carbohydrate, 130 mg cholesterol, 820 mg sodium, 1 g fiber

Funny! Before I even read the recipe, I thought that I would use some vinegar over the porkchops to keep them tender. I often use vinegar while cooking meat. Even in pot roast, I add vinegar to the water and it keeps the beef very tender. I will definitely try this recipe.

I never new that vinegar could be a tenderizer, but it beats a lot of salt.It sounds so good I,ll haft too try it some day. But can you use banana peppers instead? My husband loves pork chops so i,m hoping he will try it.
